INGREDIENTS FOR 4 PEOPLE
4 beef fillets of approx. 140 g each
Salt and pepper
Fresh thyme
LaSelva vegetable stock
1 jar of LaSelva pumpkin paste
LaSelva extra virgin olive oil
Butter
1 clove of garlic
8 potatoes
Fresh rosemary
PREPARATION TIME | approx. 75 minutes
PREPARATION
1 | Season the beef fillets with salt, pepper, olive oil and thyme and leave to marinate for 1 hour.
2 | Dilute the pumpkin cream with a little hot vegetable stock and a little olive oil.
3 | Boil the potatoes, then peel and slice them. In a pan brown the marinated fillets on each side for about 4-5 minutes with olive oil, butter, garlic and marinated herbs.
4 | Pour the diluted pumpkin cream on a plate and put the fillet with the potatoes. Garnish with fresh rosemary.
