Fried aubergines with tomato


1 kg of aubergines
3 tomatoes or 1 jar of LaSelva Tomito
1 jar of LaSelva Semi-dried tomatoes with capers in olive oil
10 Black olives in brine
LaSelva Extra virgin olive oil
2 cloves of garlic

PREPARATION TIMEapprox. 1 hour


| Cut the aubergines into cubes of about 2 cm, salt and let drain for half an hour in a colander. Then dry with a cloth and fry in olive oil.

2 | Finely chop the garlic, fry in a pan and add the semi-dried tomatoes with capers and Tomito.

3 |Cook over a low flame for 10 minutes. Add the fried aubergines, olives and cook for another 10 minutes.

4 | Serve.
